Italian Chicken & Broccoli Casserole

Well, as I promised yesterday in my Menu  Plan Monday post, here is the recipe for the Italian Chicken & Broccoli Casserole that we had yesterday.
3 Boneless, Skinless chicken breasts (baked & shredded)
2 Cups uncooked rice (cook according to the directions)
2 Cups Shredded Cheese (I used Kroger brand Pizza Style cheese)
1 Packet of Zesty Italian Dressing Mix
2 Cups of Milk
1 Can Cream of Chicken & Mushroom Soup
1 Can Cream of Broccoli Soup
1 12 oz. bag of frozen Broccoli bits
6 slices of provolone cheese
preheat oven to 350 degrees
Put the cooked rice in a 9x13 baking pan.  In a large bowl thoroughly mix together the shredded cheese, shredded chicken, broccoli bits, milk, both cans of soup, & the Italian dressing mix.  Pour this mixture over the rice, top with provolone cheese slices.
Bake for 35 minutes.
Did we like it?
Well......
It was ok....it had a nice, simple flavor and was extremely creamy.
With some tweaking I think we will like it better!  I think it definitely needs more chicken and another packet of Zesty Italian Dressing Mix or other seasoning for more flavor.  Next time I think I will omit the provolone cheese slices and just add another cup of shredded cheese because the slices did not melt very well.  I might even cut the milk by at least half a cup as it was extremely creamy.
